Lee, I've never taken apart a Pi camera so I can't say if it would work, much less recommend it. I've taken apart a few Logitech cameras and it's usually pretty simple. I've also used Foscam as David Champion mentioned. Could always take out the Wi-Fi board one one of those if that bothers you.

Have you looked at the cheap Foscam cameras? You can get them with wired or
WiFi or both connections. They have an optional microsd slot but you can
use them as a pure network camera.
