Good points all, and had considered them:

 * Tried GPT originally, then realized the error of my ways and rebuilt
   with MSDOS.

 * Actually, this isn't an UEFI MB, so that wasn't the problem.

FTR, I finally realized that the problem was that the BIOS was set to boot
the RAID controller, not thinking that the cheap build-in system (RAID 10
at best) was not being used (I had built the array RAID6, my preference).
Once I rooted around in the BIOS and found the Legacy SATA mode, it fixed
the problem.
