OK. I have two quick thoughts for ya Ray:
1) Why not just use a bunch of screen shots?
2) So... you don't want to use screen shots... and you want to not switch apps or have to use the dock? You could also switch users. Have one user started up and surfing for the demo, then switch to the user you'll use for the presentation. It's just a third option for where to click, but it does come with a nifty keynote-esque cube animation.
