This is kind of par for course w/ bluetooth. The common technique is to
disaccociate and then reconnect. I had to do this a couple times with it
working sometimes and not others then it started working consistently (mine
even shows up as a modem and I can connect to the internet).

Click the bluetooth icon in the upper bar, presumably your device is listed
there. Don't click it, insted click bluetooth preferences. Click once on the
name of your phone and then hit the minus sign at the bottom left corner of
the window. Then hit the plus sign and re-add it.

For some mysterious reason you just have to do this once in a while. As I
mentioned, after a few tries finally mine has a good connection and I
haven't had to re-do it. And if it makes you feel better, I've had to do
this on every operating system, not just Mac OS.

Personally I don't understand why the phone doesn't show up as a mounted
drive that I can just browse w/ finder. (it does if I use USB instead of
bluetooth) But again, this is not just a mac thing... in Windows and Ubuntu
I also have to use the "browse device" feature to look at it through a
special window.
