Am I missing something?

Do you mean new folders for mailboxs? Then Mailbox>New Mailbox should  
help
Automatic routing? Preferences>Rules set your rule and destination.
Add to address book? Message>add sender to address book

I wouldn't touch the Entourge file structure. It is the same as  
Outlook Express and I lost everything once when one the index was  
corrupt.
