1. VMware

I have tried and own licenses to both and by far I prefer VMware.  
VMware Fusion has support for things like multi-core (parallels can  
only use 1 core if you have a dual/quad core machine which limits you  
on the VM performance if you really want windows/etc to boot up fast  
and get the work done and then shut it down. Also VMware supports 64- 
bit OS's/apps which Parallels doesn't yet support.

Plus soon VMware will support running Mac OS X Server in a virtual  
machine which will be great (NOTE I said Leopard SERVER and not the  
client version! Apple Legal won't allow that for now.)

That said Parallels is not that bad either, but i feel like VMware can  
pretty much match everything Parallels can do and more and is less  
resource intensive especially if you have a lighter machine with not  
as fast a CPU/RAM,etc

I used Parallels for a long while to do my homework on XP/Visual  
Studio and make sure that documents were readable in MS Office for  
Windows and recently switched to VMware and now that they will soon  
allow you to run virtualized instances of Mac OS X server Im sold. I  
believe Parallels may do the same thing as well, but they seem to be  
getting behind lately.

I think both of them may also allow you to boot off of a Boot Camp  
Partition as well.

All in all both of them are good choices, but if you want a future  
proof app i'd go with VMware as it's been around a long time and  
theres a big community around providing VM's of various operating  
systems for you to try with VMware like Solaris, Linux,etc so you  
don't have to install and set them up, even for a programmer like me  
sometimes getting the VMware/Parallels tools to work with Linux /  
other OS's isn't that easy sometimes.

2. Just go to their pages and google around, I found more than enough  
resources this way.

  ) I can attest to seeing Mac OS X server run well on VMware if you  
are considering that as well.
