The number one reason is that SD cards are a crap storage solution. Even
the best brands are fragile. The reason that "pro" photographers demand
dual cards in high-end cameras is because telling someone that a
once-in-a-lifetime shot (think wedding photography) was lost because a SD
card failed is business suicide.

Number two is USB power supplies generally suck. You have to be very
careful to find one that can supply enough juice to power a 3B+ and even
then you're likely to get glitches (which in turn cause corruption of the
file system on the SD card).

Number three is that the performance of the Raspberry Pis are crippled in
so many ways I doubt that you really save much energy vs the same workloads
on an appropriately sized server. At least not enough to offset the other
benefits of using "server" hardware.
