To add a bit to that, the longest uptime I've personally seen was on a
debian box.  I've read logs though from redhat 6 boxes that look similar.

I'd say Ubuntu because it's more popular agreed.  RHEL (or centos) because
it's what is used in the majority of ent deployments today. To say Ubuntu
is "more stable"  is awkward at best.
