The phidgits are cool, but the upfront cost is kind of high. The arduino can
read the phidget sensors <http://regexp.bjoern.org/archives/000189.html> and
the starting cost is under $35 (I bought my arduino kit for $25 and I've
seen kits for under $15). It is very linux friendly. The link shows you a
board someone made for their arduino that allows you to interface with 6
phidget sensors.
