I've actually done this recently with lame.  If you grok the man page for lame, you can actually record /dev/dsp, /dev/audio, etc directly to mp3.  It worked OK on my 500 MHz laptop as long as I shut everything else down.  If you have a faster processor, it will probably work much, much better.

If you can't figure it out from the man page, let me know and I'll re-grok it myself and regurgitate it to the list.
