Are you looking to script it?  If so, any old *nix command line tool for
backup/mirroring will likely either be available in the macOS Unix shell,
or findable on the 'Net.

If not, there are plenty of other GUI backup tools.    Here's some:

I've used (older versions of) Carbon Copy Cloner to smart-mirror my drive
for off-site backup for a while.

I also use the built-in macOS "Time Machine"  incremental backup system to
backup to an alway-attached backup drive.

Not sure you could use a directory on a fileserver or not (never tried) but
if you can mount it as a drive on the Mac then maybe!
